Realistic training prepares nutrition and diet therapy students at METC

During the Patient Tray Services block of instruction in the Medical Education and Training Campus Nutrition & Diet Therapy course, trainees apply classroom knowledge in a hands-on kitchen laboratory environment that mirrors real-world clinical food service operations.

Students execute the full tray line process, including diet order interpretation, portion control, meal assembly, accuracy checks, and sanitation procedures. Emphasis is placed on precision, time management, and compliance with therapeutic diet requirements to ensure meals meet both nutritional and medical standards.

This training reinforces the critical role military nutrition care specialists play in patient care and recovery within fixed medical facilities.

By integrating food service operations with clinical nutrition principles, trainees develop the skills necessary to safely and efficiently support patient populations while maintaining quality control and accountability.

The kitchen lab provides a controlled, realistic setting where students build confidence and competence before transitioning to operational assignments across the Army and Air Force medical systems.
